Cable Scarf with Pom Poms

Supplies: 
Large knitting needles
2 balls of heavy yarn your choice
Piece of cardboard for making pom poms
Plastic large hole needle

Cast on 12 stitches

Row 1 purl

Row 2 knit

Row 3 CF8 (slip 4 stitches on cable holder, hold in front knit 4 stitches from left hand needle, knit 4 from cable holder), knit 4

Row 4 purl

Row 5 knit

Row 6 purl

Row 7 knit

Row 8 purl

Row 9 knit 4, CB8 (slip 4 stitches onto a cable needle, hold in back, knit 4 stitches from left hand needle, knit 4 from cable needle)

Row 10 purl

Row 11 knit

Row 12 purl

Row 13 knit

Row purl

repeat from row 3 to row 14 until desired length.

To finish:  work row 3,4,and 5, and bind off attach pom pom.


To make pom pom I use a full ball of yarn divide it in half. Roll on piece of hard card board. Tie with thread snug. Cut off board. Sew onto scarf.

Flan Cake

My nephew Carl introduced me to this delicious cake, it's creamy flan on top with moist cake on the bottom. Basted with the caramelized sugar on the side.


Supplies: flat bunt pan,
 large platter to serve on
large pan to cook in water bath
vegetable non stick spray
blender

Cake ingredients: 
1 box of yellow cake mix
3 eggs
1/3 cup vegetable oil
1 1/3 cup water

Flan ingredients;
1 cup sugar for syrup
1 can evaporated milk 12 oz
1 can sweeten condensed milk 14 oz 
3/4 cup whole milk
4 eggs
1 teaspoon Kahlua

Sugar Sryup
In heavy sauce pan place 1 cup of sugar on stove at medium heat. When sugar starts to melt swirl pan in circular motion to help the process see  Flan  
After sugar is melted quickly pour into bunt pan that has been sprayed with vegetable oil. The sugar is very hot and will harden quickly.

Cake
Prepare cake as indicated on the box. Pour 3/4 of batter over coated bunt pan. Batter must go in pan before the flan mixture.

Flan
In a blender add milk, condensed milk, evaporated milk, eggs, Kaluah, Blend on hi till well mixed. Pour flan mixture on tip of cake batter. Flan will soak through the bottom.  
Place bunt pan in large baking pan 1 to 2 inches full of water.

Bake 1 hour 10 minutes at 350 degrees
Test with a tooth pick inserted should come out clean
Let cool completely chill for at least 1 hour





To unmold run a butter knife around the edges, with large plate over top flip over.

Tortilla Soup



The weather is starting to get cooler it's time forone of my all time favorites tortilla soup.

Ingredients:
1 1/2 pounds extra lean ground beef meat
2 -16 oz cans pinto beans
1 medium onion chopped
1/2 teaspoon salt
1 can whole kernel corn
1 pkg taco seasoning
2 cups water
2 cans 14.5 diced tomatoes with juice
1 can tomatoes with green chilies
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1- 4 oz chopped green chilies
1 package dry ranch dressing

Brown and scramble ground beef. Add remaining ingredients and mix well.  Cover, and simmer soup for 1 to 2 hours, stirring occasionally.

Serve with tortilla strips fried in oil,  tortilla chips,or  chili cheese Fritoes with shredded cheddar cheese.

I found these old painted canisters, I decided to up date them to match my kitchen.

Canned Homemade Salsa

It's tomato time again, this is what my husband likes the best homemade SALSA and chips. this recipe makes 8 quarts.

Supplies: 8 canning jars I prefer large mouth
8 lids, with rings.
large canning pot
thongs for lifting hot jars from water
pot for boiling the sauce 8 quart size


Ingredients;
40 medium size tomatoes
2 tablespoon of fresh cilantro
2 cups of fine chopped onions
2 cups of fine chopped bell peppers
1/2 cup fresh squeezed lime juice
2 teaspoons cumin powder
2 teaspoons chili powder
4 teaspoons salt
6 fresh jalapeno peppers chopped fine, depending on how hot they are you may need more or less, I find that my home grown peppers are much hotter that the store bought ones.
Place all chopped ingredients in large pot bring to a boil.


Wash jars squeaky clean, place in oven at 200 degrees for 20 minutes to sterilize them.

 Place lids to simmer in separate pan with water to simmer, it's  not necessary to hard boil lids. A simmer will soften the seals.

Pour the homemade salsa in the hot jars. Using funnel.


I use a wet paper towel to wipe the rim, followed by a dry towel. This keeps the rim clean, which will help the jars seal properly.


Tighten the lid, I tighten until it is snug, I don't wrench it extremely overly tight.

I do a hot water bath at a simmer boil, not a rolling boil for 20 minutes to process. I found when I boiled too hot my jars would break, or my lids would crimp in half spoiling the sauce.

Simple Hand Painted Christmas Ornaments Victorian Roses


This is a simple hand painted rose. It makes a wonderful Victorian Christmas Ornament, or decoration for a Victorian Style home.

Supplies: paints are buttermilk, lisa pink, seminole green, cactus green, boysenberry pink, and white. Heart shaped wood. eye screw, 1 large pearl, 1 small pearl, pin wire, eye hole wire, round needle nose pliers, regular need nose pliers, wire cutters,  ribbon, and  hot glue.
 Brushes #4 square, #4 round, # filbert, #8 flat, liner brush, brush basin, and paper palette.

Base coat heart with cactus green, after sanding.

Glue pearls with hot glue.


Add pearl through eye hole pin, bend forward around round needle nose pliers.
Slip on to heart pearls.
Repeat with smaller pearl. Make bow hot glue to front of heart, add ribbon through eye hook to hang.
